In the US, livestock producers have two options for selling meat legally.

Retail sales of individual cuts require USDA inspection.

Shares don’t require USDA inspection and can be done at custom exempt facilities.

Retail Sales

All meat which is sold at grocery stores and in restaurants must be federally inspected. This inspection must happen at both the slaughter facility and the butcher shop. You might have noticed the little round circle stamp on the packaging identifying the inspection number. Currently we are not offering retail cuts of pork, only beef and lamb.

Shares

Shares are a work around federal inspection and are processed at custom exempt facilities. This is the route taken by hunters and owners of livestock. If you own the animal before harvest, then a federal inspection is not required but the meat cannot be resold, and this is made very clear on each individual package as seen below. This is more cost efficient then federal inspection, and another benefit is the mobile units who dispatch the animal on farm to elevate the stress of travel.

We are not offering retail cuts of pork, we still have options for shares

Our cut-and-wrap partner, Bud’s Custom Meats in Penngrove, does not offer ¼ pork shares. However, we still want to provide an option for customers with limited freezer space or those looking to purchase a smaller quantity of pork. To make this possible, we’ve created a ¼ share package with a predetermined selection of cuts. Check out the comparison graphics below to see how our ¼ and ½ shares differ, followed by a detailed breakdown of what’s included in each ¼ share package.
